Classification of carcasses is statutory in the EU. Nearly all pig, cow and sheep carcasses are classified according to the common standard, which is the EUROP classification. The authority responsible for classifying carcasses in Finland is the Finnish Food Authority. Foodwest’s classification supervisors perform practical classification supervision in slaughterhouses, authorised by the Finnish Food Authority. Additionally, Foodwest’s classification supervisors are responsible for classification training and participate in the EU’s classification meetings and country check-ups as experts.
